Red Quinoa Salad with Lemon, Mint and White Beans

Total Time: 20 minutes

Skill Level: Easy Peasy. Budget: $. Serves: 4

Ingredients:

  • 2/3 c. red quinoa
  • 1/2 c. Italian parsley, finely chopped
  • 2/3 c. mint leaves, finely chopped
  • 1 3/4 oz. scallions, green and white parts thinly sliced
  • 1 1/3 c. cooked cannellini beans, drained
  • 2 lemons, skins and seeds removed, flesh finely chopped
  • 1/2 tsp. ground allspice
  • salt and black pepper
  • 1/4 c. olive oil

Directions:

  1. Bring a sauce pan of water to boil, add the quinoa and simmer for 11 minutes.
  2. Drain and refresh under cool water and set aside to dry completely.
  3. Transfer the cooked quinoa to a large bowl. Add the parsley, mint, beans, green onion, allspice, olive oil 3/4 tsp salt and some black pepper.
  4. Stir together and serve.
