Lemon Green Beans [project # 234]

Lemon Green Beans: Total and Active Time: 15 minutes

Ingredients:

  • 1 lb. fresh green beans
  • 1 lemon
  • extra virgin olive oil
  • salt and pepper

Directions:

  1. Heat a pot of water to boil. Meanwhile trim the ends of the green beans and cut them in half if they are long, you want them to be bite sized.
  2. Cut a lemon in half and squeeze one half of the lemon juice into the boiling water. When the water is at a rolling boil add the prepared green beans and blanch for two minutes.
  3. Drain by pouring the beans and water through a colander. Immediately squeeze the lemon juice over the beans, then drizzle with 1/2 tbsp. olive oil and sprinkle with salt and pepper.
  4. Give the beans a toss so they are all coated with the seasonings and serve.
