Lemon Green Beans: Total and Active Time: 15 minutes
- 1 lb. fresh green beans
- 1 lemon
- extra virgin olive oil
- salt and pepper
- Heat a pot of water to boil. Meanwhile trim the ends of the green beans and cut them in half if they are long, you want them to be bite sized.
- Cut a lemon in half and squeeze one half of the lemon juice into the boiling water. When the water is at a rolling boil add the prepared green beans and blanch for two minutes.
- Drain by pouring the beans and water through a colander. Immediately squeeze the lemon juice over the beans, then drizzle with 1/2 tbsp. olive oil and sprinkle with salt and pepper.
- Give the beans a toss so they are all coated with the seasonings and serve.
